Last Saturday was a very busy day for me. Lots of things to do, to little time to do it. There were really a lot of D.I.Y. home improvement projects that I have started but had no time to finish. So last Saturday was the time to finish at least half of them.
One of those project was for a vegetarian lunch for the kids. My two eldest (Dianne and Diether) is actually a meat lover and really don’t like vegetable. So this was a real challenge for me as a Father and the designated cook.

makes 4 serving
What you need:
4 blocks of Tofu
20 snow peas
1/4 cup of Mama Sita’s Oyster Sauce
2 tbsp water
2 tsp sugar
3 clove of garlic, chopped
1 onion, sliced thinly
1 cup vegetable oil
1 tbsp. sesame oil
How to make it:
1. Fry tofu in vegetable oil for 3-4 minutes per side or until golden brown. You want them crisp on both side. Then cut into cubes and set aside.
Note: Do you know that Tofu is a high protein, low fat energy source.
2. Pre-heat on medium fire a separate pan, saute garlic and onion on sesame oil until onion became translucent. Then pour in the pan the Mama Sita’s Oyster Sauce, sugar, water and the snow peas. Mix well, because you want the oyster sauce and the sugar to combine and have a great taste that the kids will like. If you like it to be more saucy, you can double the mixture of the oyster sauce, sugar and water.
3. Simmer for 2-3 minutes until the snow peas are cook. You don’t want to over cook the snow peas because you will loose its crunchiness. The crunchiness is the added feature in this dish, so you don’t want to over cook it.
3. Turn off the fire, add the cube tofu and mixed well. Careful in mixing, you might crush the tofu. You don’t want a squishy tofu for lunch.
4. Server on top hot rice.
