Yesterday I went out to do our groceries. You know the usual stuff. It’s a weekly routine. Then I started thinking (not that I don’t think…), what would my kids like for snack. Then I remember a recipe in an old magazine that I read at a place.
So I started looking for the ingredient. The ingredient are really not hard to find. But it took me a long time to decide if I will go with the conventional elbow or the shell macaroni. So I didn’t, I used the Ribbon pasta instead to add more interest to see a new salad.
The good thing about the salad is that it has pineapple. Pineapple is one of those foods that is heaven to eat. A good, juicy ripe pineapple can satisfy a sweet craving as well as any chocolate bar. In addition to being a delicious food, there are many health benefits of pineapple. Loaded with Vitamins and Minerals, it strengthens bones, and is good for prevention colds and coughs.
The kids love it. They want me to teach them how I make it. So we made another batch and gave it to their Grandma and Grandpa.
What you need:
4 cups cooked ribbon pasta
1 can (8 oz.) of pineapple tidbits, drained
8 oz. cooked ham, cut into strips
8 oz. cheddar cheese, cut into strips
1 cup celery, thinly sliced
1 tsp. minced onion
½ cup sweet pickle relish, drained
½ cup mayonnaise
1 tsp. salt
How to make it:
1. In a bowl, combined pasta, ham, cheese, pineapple, celery, onion and pickle relish. Mix well
2. Add mayonnaise.
3. Season with salt and mix well.
4. Chill in refrigerator before serving.
