Last Sunday is my parents wedding anniversary. My mother ask me to cook for them, for she like the sweet and sour pork that I had cooked a month ago. This is the first time that I will be cooking for a large crowd, but everything was well I did a good job and everyone liked it.
We start with the ingredients:
1 kl. pork
½ all purpose flour
100 g each red and green bell peppers cut into strips
1 can pineapple chunks, drained syrup set aside
½ cup ketchup
¼ cup vinegar
2/3 cup sugar
½ tsp iodize salt (1/2 tbsp iodize rock salt)
¼ cup cornstarch, dissolved in 2 cup water pineapple syrup
1. Boil pork in 1-3/4 water until just tender. Cut into cubes. Then set aside.
2. Beat eggs. Add flour and 1/3 tsp iodizes salt (or ½ tsp iodizes rock salt). Mix until smooth. Dip pork in batter mixture then dip fry each pieces until golden brown. Set aside.
3. Combine sauce ingredients. Simmer until thick then add bell peppers and pineapple chunks. Simmer once then add fried pork.
You can also use ready made sweet and sour sauce.
Make 9 – 11 servings.
